Esquites is a traditional Mexican street food made from grilled corn kernels that have been seasoned with lime juice, chili powder, and other spices. The name comes from the Nahuatl word “īstēhu” which means "to eat". Esquites are typically served in a cup or bowl with a small wooden stick for scooping up the corn kernels, and topped with ingredients such as queso fresco, crema, chili powder, and lime juice. They are a popular snack at festivals and street fairs throughout Mexico, and have become increasingly popular in other countries as well.
