To be fair, most dentists probably don't see many patients who are eating a specific diet to improve their oral health, and most of the studies and research they read is probably done on people eating a somewhat average diet (high in phytic acid and low in Vitamin D), so it is very logical that they wouldn't think that teeth could heal.
