+ at a specialty shop.
Warm Potato

Tahini Dressing ~ I think most of us have those special things that we always have to get when we go to certain places that we love to frequent.
1 lb dried chickpeas, soaked overnight and drained
+ 1 tbsp kosher salt, plus more to taste
+ 1 tsp baking soda
+ 1/2 c
tahini + 6 tbsp lemon juice
+ 6 tbsp olive oil, plus more to garnish
+ 4 garlic cloves, mashed into a paste
+ freshly ground black pepper, to taste
+ pita chips, for serving
To put bowls together, toss lettuce, mushrooms, roasted sweet potatoes together and top with fried egg
+ drizzle of
tahini dressing.
Dressing
+ Bowl Assembly: Whisk together the
tahini dressing ingredients, adding in extra almond milk if you prefer a thinner consistency.
10 oz roasted chestnuts (store - bought or roast your own) 1/2 cup
tahini paste 1 large garlic clove 1/2 -1 cup water juice of 1 lemon 1/2 tsp cumin or 1/4 tsp cumin
+ 1/4 tsp cardamom 1/4 cup extra virgin olive oil kosher salt and pepper, to taste
* If you do not have access to Vegan Cream Cheese, you may substitute it with 1 tablespoon of
Tahini + 1/2 teaspoon of Apple Cider Vinegar
1/4 cup
tahini 2 tbsp lemon juice 2 tbsp apple cider vinegar 1/4 cup water 1 tbsp Bragg's or soy sauce (I used Bragg's) 1 tbsp
+ 1 tsp maple syrup, or to taste 2 tsp curry powder (I used Penzey's sweet blend)
I don't want to give up my chickpeas
+ rice stir fry with cilantro
tahini sauce, or my sautéed collard greens with butter beans and pesto sauce!

1/2 cup dried lentils, rinsed (I used small black beluga lentils but green ones would work well too) 1/2 cup uncooked coarse bulgur 1/4 cup
tahini 3 garlic cloves, minced or pressed 1/2 cup fresh lemon juice (from 2 large lemons) zest from 2 lemons 1/4 cup nutritional yeast 2 tbsp extra virgin olive oil 1/2 tsp sea salt
+ freshly ground black pepper, or to taste 2 tbsp water, or as needed 1 tbsp coconut oil 3 cups chopped leek, white and green parts (1 large leek) 4 garlic cloves, minced 3 cups chopped red bell pepper (2 red peppers) 1 cup chopped snow peas 1 cup chopped tomato (2 small Roma tomatoes) 3 cups spinach, destemmed and roughly chopped
Swap out the black beans for white beans, sub the walnuts for pecans,
tahini for PB or coconut oil, ditch the coffee altogether
+ sweeten as you like.
