I made this with carrots instead of squash and instead of coconut milk used a bit of stock and half a block of
creamed coconut so it was more of a spicy carrot puree on the sweet potato (and substituted the chick peas for green peas plus
added some
spinach) and it was delicious.
Add the broccoli,
spinach,
cream, bacon, salt, and pepper.
The
spinach flavor isn't overwhelming, but it's definitely present, and the tang from the sour
cream adds that little something that keeps you coming back for more.
The smokiness reminded me of bacon, which makes me now want to make it again with bacon
added... but now I am thinking to myself, I have this nice healthy
spinach, then I heat it with
cream,
add butter and cheese, and now bacon?
Add 2/3 of your stock or
cream, a tiny bit at a time, scraping up any stuck
spinach as you do.
Then
add your
creamed cheese mixture, then sprinkle
spinach on top.
I don't really have anything to
add, I made it just as - is, no sour
cream, had a simple
spinach salad on the side, and it was a wonderful meal: --RRB-

From there, I used a spoon to
add the
cream cheese,

Mince or grate the garlic and

cream and 3/4 cup of the parmesan cheese, stir well.

Don't discount the importance of a healthy dollop of sour

I love the creaminess of a
