The
zucchinis, while
adding vitamins and nutrients, also make a good substitution for
noodles, I think.
The main difference between this recipe and a chicken
noodle soup recipe (besides the obvious omission of
noodles) is that I used
zucchini in this soup to
add some vegetables and flavor.
Place the
zucchini noodles on top, then
add the remaining sauce.
Add the onion and carrot
noodles and continue to saute for 3 - 4 minutes before
adding the peppers and
