You could use
agar powder
instead but it is hard to find unbleached, you use 1/3 of what you need with the flakes but always test it like I suggest in my book.
You can also make it vegetarian by using
agar flakes
instead of gelatin, although the texture will be firmer.
The following binding agents can be used
instead of xanthan gum: acacia (arabic) gum,
agar agar, carrageenan, chia seeds, egg whites, flax seeds, gelatin, guar gum and psyllium husk.
