almond butter and puffed quinoa chocolate bars (seriously best thing ever), their walnut fudge brownie and their
cookie dough truffles.
These
cookies look amazing — I've never baked with
almond butter before, so I've got some lost time to make up
for!
I followed your recipe to the letter, beating
for two minutes, oven at 350, and in fact using my own homemade
almond butter and the batter was like no where near a texture I could «spoon» onto a

This time I used
almond butter instead of cashew
for the
cookie dough, because that's what we had, but go with any nut
butter you like best!

Cookies have something
for everyone, and no doubt will become a new favorite when a
cookie craving strikes.
1/4 cup nut
butter (I used
almond for these, but cashew in my original
cookie dough recipe - both are great!)
Some recipes call
for almond flour or a combination of coconut flour and some arrowroot powder, but the
cookie we always have in the freezer uses
almond butter as a base and was created by Danielle Walker of Against all Grain blog and several cookbooks.
1 very ripe banana 1/2 cup of fresh blueberries + extra
for decorating the
cookies (optional) 2 tablespoons of milled flaxseeds + 4 tablespoons of water 1/2 cup of
almond butter (peanut
butter will work as well) 1 1/2 cup of jumbo oats 1/2 cup of ground
almonds 3 -4 tablespoons of roughly chopped hazelnuts 3 tablespoons of melted coconut oil 3 tablespoons of maple syrup or date nectar a dash of vanilla extract 1 teaspoon of baking powder 3 tablespoon of

for a gluten - free version * 3/4 cup cocoa powder (I used Dagoba organic, fair - trade cocoa powder) * 1/2 teaspoon baking soda * 1/2 cup Lyle's golden syrup * 1 large egg white, preferably organic and free - range * 1 teaspoon pure vanilla extract * 12 tablespoons (1 1/2 sticks) organic salted
butter, softened * 1/3 cup dark brown sugar, packed (I used Wholesome Sweeteners organic, fair - trade dark brown sugar) * 1 bar / 3 ounces dark chocolate with mint, chopped into 1/2 inch pieces (I used Theo Peppermint Stick Dark Chocolate)
Once the
cookies are done, remove them from the oven and leave to cool
for a few minutes then drizzle over the
almond butter on all the
cookies.
