soup is a refreshing change from most recipes and gets its flavor from fresh cilantro,
avocado and
lime.
The
lime and cilantro add a brightness to the flavors, the
avocado lends a delicious creaminess, and the chips... well, you can't have tortilla
soup without tortillas!
I love to have additional toppings to add to
soups like this so I chopped up some cilantro, added a squeeze of
lime juice, some
avocado, a sprinkle of grated cheddar and crushed tortilla chips.
Easy to make vegan black bean
soup topped with
avocado bread croutons, red onion,
lime, and cilantro.

Blend with yogurt, dill, a scoop of ripe
avocado, make a veggie smoothie or
soup... with an ice cube and another squeeze of lemon or
lime it's a healthy and delicious summer refreshment, and quick to make.
We ate at a salad /
soup restaurant the other day where I had an
avocado lime dressing and fell in love.
It tastes awesome with slices of
avocado (w / salt and
lime juice squeezed on) used to scoop up the
soup.
It's still a hot
soup, but for some reason the black bean and California
avocado with a touch of
lime combo makes me feel like the flavors are great for those warm spring days as well!
The
avocado provides a nutrient - dense body to the
soup along with a nutty richness that goes so well with chile, cilantro and
lime.
If you don't have garnish ingredients such as cilantro,
lime,
avocado, and tortilla chips or baked strips, the
soup is good, but it won't be over-the-top amazing until you garnish it.
Make the
soup: To a blender, add the melon, roughly chopped cucumber, basil,
avocado,
lime juice, 1/2 teaspoon of the salt and the ice cubes and purée until completely smooth.
Squeeze a wedge of
lime over the
avocado and sprinkle cilantro over
soup.
Ladle
soup into individual serving bowls, and top with
avocado, cheese, cilantro and serve with
lime wedges.
This light
soup (traditionally made with chicken and chicken broth) gets its body from diced

A simple gluten free and vegan black bean
soup that is perfect served with
avocados, red onions, cilantro and a squeeze of
lime juice.
Serve the
soup garnished with
avocado, cilantro, sliced radish,
lime, cotija cheese, and crumbled tortilla chips.
The
soup comes in six flavors including clásico (tomato, green pepper, and herbs), maíz (corn, roasted poblanos,
lime), and of course, a version with kale, called Verde (it also has spinach,
