I've made
banana bread muffins before, but the loaf turned out way
better.
Mash
banana, mashed avocado, pumpkin purée, yoghurt, or apple sauce are exciting to bake with and offer
good flavors to
muffins, cakes, brownies, and sweet
breads.
I have made so many different
banana bread /
muffin recipes and this one is definitely one of the very
best!
I was especially pleased that the texture was almost exactly like «regular»
banana bread, as I've tried several paleo
bread /
muffin recipes with unpalatable textures and I was starting to think that
good paleo
bread did not exist.
I never had zucchini
bread growing up, but I do love
banana bread, and these cupcakes /
muffins are the
best of both worlds.
:) Anyway, pictured is an assortment of whole - grain pumpkin, zucchini, corn
bread, and blueberry
muffins or you could also add some
banana nut or cinnamon raisin
muffins to the mix as
well.
Tried the white cake
muffins and
banana bread in
muffin form which are even
better the second day!

muffins because they are so moist and I like adding crushed pineapple to my
banana breads to make them moist as
well.
They taste like the
best banana bread, but slightly softer and fluffier as befitting a
muffin.
These cupcakes are sweetened with maple syrup, since we also haven't introduced honey yet, but if you want a recipe that is free of all added sugar, the
banana bread I just mentioned, as
well as these
Banana Snack
Muffins, would make a great option, too.
