The trick to the tortilla
bar pizza is using a cast iron pan, which can get roaring hot to give the cracker - like
crust, and fitting the tortillas into the pan so that the toppings don't slide off,
as the pizza has little or no raised
crust.
Of course once you bake the inside in the
crust it's no longer raw, but I have used the
crust recipe separately (to make snack balls,
bars, or
as a
crust for a raw dessert) so that's why it's described that way.
The ingredients on these
bars are pretty much the same
as what you'll find in a pumpkin pie, in fact these function pretty much just like a pumpkin pie, but without the familiar pie slice shape, and with a
crust that is a bit different than your typical pie
crust.
So the raw raspberry lemonade
bars goodness is where it's at and this light
as air pillowy cloud of tangy lemon and raspberry on a decadent nutty
crust without any added sugar is DA bomb.
My lemon
bars definitely didn't look
as great
as yours, and some parts of it are separated from the
crust, maybe i over baked the
crust?
This recipe is an adaptation of Jan's Sushi
Bar's Sausage Mushroom Breakfast Casserole, her recipe calls for sweet potatoes
as the
crust, which is absolutely wonderful, I just prefer a lower carb / glycemic breakfast (and one that I can eat everyday).

uhm, this looks FABULOUS, except, WAY too much fiber for me #IBSproblems, quest
bars and me are not really friends, except in small doses, maybe I can make this sans
crust great idea, I keep eating my over abundance of apples plain, I feel like I should get my Betty Crocker on
as well and bake!
Otherwise, the energy lost would also result in the
crust cooling
as it obviously has in the past,
barring some miraculous new discoveries in physics.
