Initially I wasn't sure if I was going to post these Vegan Pistachio Lemon Truffles on the blog because the internet is just so full of these types of recipes... but after we tried them, we just knew that they HAD to be featured on the blog so that we could share it with you crazy people.
When I was growing up outside of Detroit there was a company called Sanders and they made the best pre-maybe caramel cake and icing I've ever had in my life... This comes right underneath that... The only thing that I will do differently is I would make the frosting the day before and let it sit out in a cool place at least 24 hours... Because this allows the frosting to stiffen up even more... Putting it on when I did, which was like An hour or so after I made it, it's still kind of went down the sides and onto the plate but when I went back today to get another piece and I pulled it up off the plate and re-frosted it then it stay this time... OK, I just finished making a small test batch of this sauce (quartered the recipe because I've had fails with caramels before), and while I usually wait to review something til after myself and others have tried a few samples... I had to head to the laptop to write a review right away just so I would stop dipping my finger tip in and licking!
I had a bit of a false start with this recipe after I tried a recipe for baked donuts and they came out looking like mini footballs, but I think the donut recipe was at fault, because since then I've used this egg replacer powder in all sorts of cakes, cookies and brownies and it's worked well every time.

After making it according to your recipe (except I did cut the frosting sugar down by half — 4 c rather than 8) the first time, my sister and I played with the recipe just a little — not trying to improve because it's awesome as it is, but to try something out because we like to play with recipes.
After reading through the other reviews, I would recommend trying this recipe before serving to guests because it seems it may be difficult to get just right the first try.

I have been trying to create these using your almond flour book and a recipe off the internet that was way too long and way too complicated, and I ended up making bars because it's easier... and I threw the choc chips on top (after several attempts of crumbly messes, I was OVER melting the chocolate).
i was watching a baking program the other day, and the chef did the croissant dough and she suggested resting the dough 8 full hours between kneading and folding, and when she covered them she had a towel and a plastic paper on top of the resting dough, and i found it very interesting... if i find the video of her episode i will share, because after seeing her demonstration, i wanted to try my hands on her recipe soon...
