flour, but it's good to note that a

I made some of my own
blanched almond flour because I read that you don't like Red mill kind and that is all we have.
- Used
almond meal from Trader Joe's instead of
blanched almond flour (added some
flour at the end when I was mixing it all together because it was a little wetter than I thought it should be)- Used mostly agave with about 1/8 C of maple syrup instead of yacon - Used 1 tsp powdered ground ginger / 1 tsp real grated ginger - Used a little less than 1/2 C grapeseed oil (didn't measure — just read some of the above comments and didn't want to use too much oil
So, here's what I
did: 2 1/2 C (10 oz)
blanched almond flour, 1 tsp b. soda, 1/2 tsp salt, 1 TBSP + 1tsp cinnamon, 1 TBSP ginger, 1 tsp cloves, 1/2 C (4 oz) pasture butter, 1/2 C (2.8 oz) coconut palm sugar, 2 TBSP water and 3 TBSP (2.4 oz) molasses.
Sadly I didn't have
blanched almond flour and was too lazy to go to the store to get some so I substituted with a mix of Buckwheat and Sorgham instead.
The macro
almond meal in new Zealand available at countdown works just fine, so don't stress it southern hemisphere if
blanched almond flour is scarce.
If you just want to try
almond flour out, this recipe
does work with plain ol' Bob's Red Mill
blanched almond meal, which is easiest for me to find in stores.
There are other good brands of finely ground
blanched almond flour, like Honeyville, but
do not use Bob's Red Mill brand or Trader Joe's brand
almond flours.
If its a special occasion, or if looks matter, I
do spend the extra and get the
blanched almond flour.

Not all
almond flour is
blanched and it doesn't always react the same way in recipes.
And I don't believe
almond flour is as high in phytates as you might think, since it has been
blanched and the skin removed (where most of the phytic acid is).
I don't think it's the same, «
blanched» refers to
almond flour that has been made from
blanched almonds (without skin) / unblanched is made from
almonds that still have skin on.
The reason I didn't use regular
almond flour (
almond meal made from ground
blanched almonds) is that de-oiled
almond flour helps achieve fluffier and lighter results.
I made my own
almond flour using
blanched almonds and
did small batches using the coffee grinder.
I've bought it for a few years and I have now tried making it from
blanched almonds,
almond flour and
almond butter and it doesn't taste good, period.

First off, I don't know of too many other nut «
flours» that are as finely ground as true
blanched almond flour, so if texture and consistency of the end result is dependent on the grind, then you may have some difficulty.
If you don't feel like adding the protein powder or don't have it, add an additional ounce of
blanched almond flour or use the original recipe.
