I made this yesterday for Thanksgiving, it was very tasty but the next time I make this I will half the amount of
quinoa and double the
Brussel sprouts.
Cheesy
quinoa, nutty roasted
brussels sprouts, and crispy bread crumbs on top.
Since I wanted something substantial to have for my weekday lunches, I decided to add
quinoa to the mix and bake it all together in a sort of mac and cheese
brussels sprout gratin type thing.

For dinner I made a healthy
quinoa bowl with leftover
Brussels sprouts, sweet potato, and spinach.
We've made this several ways, which are also winners — sub 1 lb cooked chickpeas for chickens, sub barley for
quinoa, sub shredded
brussel sprouts for cabbage.
We had phyllo wrapped asparagus (a la Paula Dean... no shame here), pancetta - gruyere sweet potatoes (probably MVP of the meal and also most likely to give you a heart attack but totally worth it), sourdough bread stuffing,
brussel sprouts with pancetta (yes, that's the second time I've said pancetta... again, no shame), and my creations, pear - pomegranate - goat cheese - pecan salad (duh), and my
quinoa risotto.

A super delicious vegan
quinoa salad made with the perfect combination of apricots, endive,

Quinoa Brussels Sprouts Beet Salad is a great salad for the Wintertime or actually anytime.
This Superfood Salad is loaded with curly kale, crunchy broccoli slaw, cabbage, shaved
