To make zucchini noodles, you really should
buy a julienne peeler or vegetable spiralizer.
When we were in Thailand
we bought a julienne like slicer.

But if you don't want to bother with having to
julienne the carrot, or don't want to
buy fish sauce and cilantro just for this recipe, that's totally fine, it will still be delicious.
If you don't want to
buy one, you can use a mandolin, though be careful because they can be a bit dangerous, or you can use a
julienne vegetable peeler.
Sure, I could pull out my sushi rolling mat, carefully
julienne my veggies,
buy raw fish, etc., etc., but it would take at least two times longer than if I just put all those ingredients in a bowl.

bought a little
julienne slicer so that I can get noodles that look more like yours, instead of using my vegetable peeler
