Since moving down to Tennessee and joining a winter
CSA from Big Sycamore Farm, I've become even more obsessed with cooking with local ingredients and trying all different kinds of
vegetables.
Which is a good thing, because my summer
CSA is set to start soon, and I need some serious inspiration to work magic on all that
vegetable matter!

Zucchini is starting to show up in my
CSA each week and although it's one of my favorite
vegetables I wanted to use it in a sweet recipe.
I ended up having brussels sprouts in my weekly
vegetable CSA and wasn't sure what to do with them since I'm not really a fan of brussels sprouts.
This year, I joined a
CSA («Community Supported Agriculture» group) and have been savoring all the fresh
vegetables I've been getting on a weekly basis.
This recipe is the first of many that will come from the great local fruits and
vegetables that I will be getting through Bailey's Local Foods, the food buying club that I joined, and Transpire Organic
CSA.
I didn't have tomato sauce, but I DID have some fresh tomatoes from my
CSA, so I gave those a rough chop and threw them in a pot with some salt to make sauce while I sliced the rest of the
vegetables.
Someday (aka when I'm no longer traipsing the country and in a different state almost every month), I hope to live in a place where I can sign up for a
CSA + shop at the local farmers» markets, and this
vegetable - centric cookbook provides a great insight into what you can make with all that in - season produce!
A frittata is very versatile, and a great way to enjoy
vegetables from your farmer's market or
CSA, especially ones you aren't sure what to do with.

Last summer, my
CSA fare got me started on roasting almost any
vegetable.
OK, here are some favorites we've been cooking up at my place: -
vegetable curry (grind my own whole spices, use whatever veggies we get in our weekly
CSA share; radishes / beets, eggplant, squash, greens, etc)- quick kale (sauteed with coconut oil, chili flakes, garlic, [lemon grass], soy sauce, lemon juice)- pac choi w / sauteed mushrooms «chinese» style (with fish sauce, rice wine vinegar, jalepeno / chili, soy sauce, etc)- roasted radishes w / poached eggs - «teamwork pasta» — this is your recipe for pepper and cheese pasta, but it helps having two sets of hands to make it in our house... we put an egg on this too of course - tuna pasta (chopped onion, garlic, lemon zest, chili flakes, tuna, olives — easily adaptable to what you already have in the house and like)- roast chicken on friday - roasted sweet potatoes - omlets - challa french toast
A few nights ago Lisa made one of those perfect - to - use - up - the -
CSA - box recipes: this warming soup used just about every
vegetable in the kitchen; adding a little pasta and some beans turned it into a great meal.
