They're
using the classic mixture of almond flour and coconut flour together to get the
muffin part right, and they have plenty of carrots, nutmeg, cinnamon, and more to get the carrot
cake part right.
Silicone microwavable bowls — the same material
used in colorful bakeware / cooking utensils (spatulas,
muffin liners,
cake pans, etc) is now available in the form of microwavable popcorn bowls (with 100 % silicone lids).
Using your waffle iron for a
cake or
muffin mix works the same way that it does with waffle batter, and you get the fun shape of a waffle AND the sweet taste of
cake!
I did sub coconut oil for butter, coconut oil is so easy to sub 1:1 and has so many good bits for you Also, I had no maple syrup on hand so just

muffins for the bouquet)- Add the
cake mix, buttermilk, oil, almond extract, and vanilla extract to an electric mixer and mix on medium for 30 seconds - Add eggs one at a time and beat until well mixed - Turn mixer to high and beat for another 2 minutes - Fill liners about 2/3 full with batter - Bake for 15 - 20 minutes, or until
cake tester comes out clean - Allow cupcakes to cool while preparing the cream cheese frosting

muffin using cake mix, these sound so good, and also love the «grape - berry» my youngest
used to love «pup -
cakes» Now anytime we have cupcakes, we call them pupcakes just for her.
So rather than do a four layer
cake, I decided to bake one two - layered, 20 cm
cake and 12 cupcakes
using a

Bake
muffins for 22 - 25 minutes until cooked (insert a skewer to check - it should come out dry) and then remove

I myself, have
used it for mug
cakes,
muffins, and I especially love it in banana bread (peanut + banana = delicious!).
The recipes in this book all
use either a sheet pan, a cast iron skillet, a dutch oven, a 9 × 13 baking dish, a
muffin tin or a
cake pan.
I altered the original recipe by turning a
cake into
muffins and
using less egg, since with light baked goods I feel that an extra egg can give the finished product and unpleasantly eggy taste.
I
used just yellow
cake mix, boiled about 2 medium sized sweet potatoes until tender, mashed them, mix this together, added walnuts, and put into sprayed
muffin tins.
And yes you may notice I am
using the words
muffin and
cake interchangeably — I know there are those who would disagree with me, but as far as I am concerned
muffins are
cakes we convince ourselves that it is ok to eat and not call dessert.
Better Batter is what I
use when I need a bit more structure (like cut out sugar cookies since it's a very simple doughs and I don't want it to fall apart at all) and / or a bit more chew (like gingerbread

use an angel food
cake pan you will have too much batter and it will overflow, the recipe would probably make 2
cakes in angel food pans or make a dozen
muffins with excess batter.
I
used a small
cake pan that's about 10 cm (4 inches), but if you don't have such pan, you can
use 2 - 3 mini tart pans or even
muffin molds.
I
use my microwave mainly for reheating things as I freeze EVERYTHING — bread,
muffins,
cakes etc (being gluten free you have to unless you can eat fast:P) but I don't usually cook too much in it as my microwave is horrible.
