Bake for about an hour (mine took 1 hour 15 minutes) but start
checking for doneness after 45 minutes — the loaves are done when center springs back when touched.

Keep in mind that, when you're making quick - cooking grains and seeds like amaranth or millet, the key to success is to keep an eye on the timer and
check for doneness as you cook, as these can go from tender to mushy in a matter of minutes.
