Bites are made with raw
cashews, dates, and shredded
coconut, so they're full of healthy fat and all the energy you need to get through a busy day or a long flight.
I've used the Naturally Pomegranate Vanilla Flavored
Cashew Glazed Mix by Sahale Snacks on top of my Pomegranate
Coconut Smoothie for a tasty crunch and an extra
bit of healthy fats and protein.
Or for a sweet, dessert preparation, just omit the shallots and
cashews, sweeten up the
coconut milk with a
bit of palm or brown sugar, and top with mango.
Its ok and preferred if extra gets on the plate, you can scoop it up with each
bite of your
Coconut Caramel
Cashew Cups.
I used almond flour (1 1/3 c) as I didn't have
cashews on hand, made 3 and omitted the
coconut oil for 1 (oops... forgot it) and pleased to say that although it was just a
bit drier it was still terrific.
There is
cashew butter in the recipe, but, I think you can sub for more
coconut oil and it will still work — just might be a
bit less chewy.
It's a basic trail mix that just has itty
bits of dried fruit and shredded unsweetened
coconut to go with almonds and
cashews.

I typically use an unsweetened
coconut milk creamer from the market but have more recently fallen in love with homemade
cashew milk in there instead (after the coffee has cooled down quite a
bit, the milk just separates and falls to the bottom of a super hot cup).
Add the chile pepper, salt and ground pepper and continue to cook, stirring constantly, until the
cashews and the
coconut are both golden brown and the chile has toasted a
bit.

This curry definitely had quite a
bit more sauce than some of my other chicken dishes (like the spicy
cashew coconut chicken) but I don't remember it being soupy... If you'd like the sauce a
bit thicker next time you can always either reduce the amount of water or simmer it uncovered before you add the
coconut milk.
It's ends up being incredibly creamy, a
bit lighter than the
cashew - based ones, and with a simple
coconut flavor.
Other
bite - sized snacks included a variety of seitan from Nobleway Foods (my favourite by far was the Noble Red Pepper & Black Sesame Seed flavour),
coconut yoghurts and
cashew cheese from Utopia Foods and mini ice cream cones from Phat Fox Frozen Fun (I confess... I had four)!
Took a
bit longer than expected but came out well... it's almost thai flavored w / the
coconut / lime combo, so I'd swap in thai basil next time and a
bit more
cashews or maybe walnuts for a
bit more crunch (the
cashews absorbed too much liquid and got soggy).

I ended up making a few changes to the crust: I didn't quite have two cups of almond flour in the house, so I modified it a
bit with
coconut flour, walnuts, and
cashews.
1 cup raw
cashews 2 quarts vegetable broth, divided 1 tablespoon unflavored
coconut oil 1 cup onion, cut into 1 / 4 - inch dice 3 cups cauliflower, cut into large chunks 6 cups broccoli, separated into
bite - sized florets and peeled stems cut into chunks 1 teaspoon dried marjoram 1 tablespoon salt 1/4 teaspoon freshly ground black pepper In a dry blender, grind the
cashews into a powder.
I find myself recommending
coconut milk as an alternative to
cashews quite a
bit, and lately I've found myself cooking with
coconut milk as opposed to
cashews pretty often.
3/4 cup organic pecans or walnuts 2 - 3 tablespoons organic nut butter of choice (we like
cashew butter) 1 tablespoon melted organic
coconut oil 2 cups pitted organic Medjool dates 1/4 cup organic cacao powder (or carob powder — you may want to add a
bit of sweetener if using carob) 1 teaspoon organic vanilla extract 1 teaspoon organic cinnamon pinch of salt 1/3 cup organic shredded
coconut (optional)
I used agar agar powder to set the matcha chai layer as it makes it a
bit more light than other raw vegan cheesecakes that are very
cashew and
coconut heavy.

My kiwi lemon cheesecake
bites are a lot like mini ice cream cakes, with a hazelnut date crust and a lusciously smooth layer of
cashew coconut cream — made sweet - tart with kiwi, lemon and maple syrup.

I like to keep my granola quite low in sugar, so I have only used dried apricots which mixed with the
cashew butter and
coconut oil create the most delicious, sticky sweet paste!Feel free to add a
bit of maple syrup or honey if you like it sweeter.
My specific energy
bite combination was 1 cup
cashews, 1/2 cup sunflower seeds, 1/2 cup
coconut flour, 10 dates, 1/4 cup
coconut oil, and 2 teaspoons cinnamon.
To help the
cashew cream set and create the smooth cheesecake texture that melts in your mouth, using a little
bit of
coconut oil is essential.
