I wanted to make some

Then try this delicious version that's made gluten - free my
using almond and
coconut flour for the chocolate
cookie crust.
The key to these
cookies is
using cold, solid
coconut oil.
If I make it as written I get a
cookie - dough thickness... My best version
uses 4 eggs and 1 cup of
coconut milk (plain, full - fat
coconut milk).
for the
cookies 8 tbsp (115g) unsalted butter, room temperature 1/2 cup (100g) white granulated sugar 3 tbsp (55g) golden syrup, I
used Lyle's 1/2 tsp baking soda 1/4 tsp kosher salt 1/4 tsp

I prefer to make press - in
cookie - type crusts (or sometimes I
use nuts, dried fruit, and maybe some unsweetened
coconut flakes instead for a healthier option).
Stein's nutritional studies, as well as her love for homemade baked goods, certainly guided her ingredients: the

Using a stand mixer, add the egg white,
coconut sugar, salt,

cookie) and honey to the bowl and mix on medium speed until smooth.

We ditched the sugar in the apple sauce (because it's really not needed if you

cookie crumble with a simple nut and date crumble and
used whipped
coconut cream on top to make it vegan.

Coconut Whip Cream on top to give it a hint Reese's when you take a bite and it's divine.
I
used oat flour and desiccated
coconut to make my
cookies.
* For cakey
cookies use softened clarified butter and
coconut oil instead of melted.
I
used both butter as well as
coconut oil in these
cookies and they turned out nice and plump.
Plus, Nutiva
coconut manna goes great in multiple types of recipes to
use as a replacement for butter where you need a solid higher fat ingredient to make a recipe work, such as my favorite no - bake
cookies.
