I wish they were a little easier to form into
balls... I even added 1 more Tbsp of
coconut oil and about 6 more medjool
dates... I'm assuming a Vitamix would do a better job than my mini food processor.

date balls and came up with a great way to keep the
coconut sticking to the
balls!
These lemon walnut
balls have the sweetness of
dates and
coconut, the earthiness of walnuts with a good kick of lemon to finish.
If rolling into cocoa powder or shredded
coconut, spread cocoa or
coconut onto a plate and roll the
date ball in whichever ingredient you are using.

balls that I am now keeping in the freezer for an after workout treat.
They might not contain any refined sugar, but the Coco fudge, for example, is cooked with
dates that melt into the mixture of chickpea flour and
coconut oil, and the Spice Bites are also
date - rich
balls with lots of cinnamon and fresh ginger, the vegan chia pudding is blended with
dates and the granola contains honey and
dates.
Examples: almond butter with some honey or agave on celery, almond butter with honey and
coconut made into candy

I soak the
dates in warm water for about 15 minutes, process all of the other ingredients in a processor, add the drained
dates, sit that for ten minutes then roll them into the
ball shape and finally roll them in shredded
coconut or cocoa powder.
Add the walnuts,
coconut flakes,
dates, vanilla extract, and salt to a food processor and process until the mixture is finely chopped and hold together when you squeeze it into a
ball.
