I simply layer a toasted oat and
coconut muesli with a raspberry and orange chia jam as well as plant yoghurt to create this stunner of a breakkie.
I fell in love with a Muesli bread recipe and have adapted this after a few tries to
this coconut muesli bread.

Layers 1 cup / 125 g

Muesli is sweetened with a blend of honey, agave syrup, and
coconut sugar, which has one of the lowest glycemic indexes of any sweeteners.
I have been making it with Familia Swiss
Muesli, pecans, pumpkin seeds, a bit of dried fruit and some unsweetened
coconut yogurt.
In a separate bowl mix the toasted
muesli, honey and
coconut oil, this will help the
muesli bind together making it easier for your popsicles to come out!
In a separate bowl, add the Goji Antiox Toasted
muesli along with the honey and
coconut oil, mix to ensure it is incorporated well.
Spoon the Goji Antiox Toasted
Muesli in the bottom of the popsicle mold, then spoon in the
coconut mixture.
A teaspoon or so of any raw nuts and seeds you like - I used 1 teaspoon each of unsweetened
coconut, pumpkin seeds, and a few rolled oats that I also use in my homemade Raw
Muesli recipe (on the blog as well).
