These Double Chocolate
Coconut Oil Cookies are the latest craze over here and that's for a few reasons..
That is my complaint with all these almond flour /
coconut oil cookies.
I love the melted coconut oil in them and thanks for stopping by today on
my coconut oil cookies!

coconut oil, 2T molasses, 4T sunbutter (or other nut butter but sunbutter gives it a great
cookie taste.)

Roll the
cookie dough directly onto parchment paper (if it's sliding around a lot, a little bit of
coconut oil or water on the backside of the paper will help it stick to the counter better.)
Coconut oil has a thicker, more butter - like texture than olive
oil, which will lend more structure to your
cookie.
They are naturally sweetened with maple syrup, the Golden Barrel
Coconut Oil makes them dairy free, and the almond flour gives them a little graininess that gives them the true
cookie dough texture.
Coconut oil is also one of the primary flavors in the
cookie, so I think the olive
oil will change the flavor profile pretty significantly.
I've made these large marges, your whole wheat honey bread, ginger chocolate chip
cookies, and
coconut oil brown sugar
cookies, and I have yet to have anything but rave reviews!
One of the recipes that caught my eye was her Whole Wheat

Cookies, and I knew it was time to try my hand at them again.
After
cookies are frozen (this helps solidify the chocolate after dipping), heat dark chocolate and
coconut oil in a saucepan on medium heat until completely melted.
The key to these
cookies is using cold, solid
coconut oil.
i have to say i doubled all the ingradients and i got 14 very tiny
cookies... so i really don't see how you got 12 small
cookies out of just three tablespoons of flour... also i had to add some flour as they got quite runny, it think maybe too much
coconut oil... they break very easily, not good for guests, they do not look very nice, mostly came out as crums, but they taste good anyway.

Cookies — 1 1/2 cup ground almonds (180g)-- 1/2 cup GF oat flour (60g)-- 1 tbsp
coconut sugar — 1ts cinnamon — pinch salt — 1/3 cup
coconut oil, melted (65g)-- 1/4 cup maple syrup — 1/2 tsp almond extract
The crust is made by blending up Enjoy Life's vanilla honey graham crunchy
cookies and mixing it with a little bit of
coconut oil.
The
coconut oil wasn't completely solid, but it wasn't liquid either... it made a perfect
cookie dough (texture so close to a regular chocolate chip
cookie dough).
We used expeller - pressed
coconut oil that doesn't have a
coconut flavor, so the chocolate chips really make the
cookies.
Blend until
cookies are fine crumbs, then add melted
coconut oil and blend until smooth.
I just made these
cookies, but I used canola
oil instead of
coconut oil.
When I first heard of
coconut oil, I decided to use it in some chocolate chip
cookies.

cookies for a second time using
coconut oil ended up like lace
cookies — did not hold together at all.
These
cookies are made with oat flour, almond / peanut butter, nuts flour,
coconut sugar, maple / honey,
coconut oil and of course lots of chocolate chips.
In an effort to see if anyone could tell that these were indeed HEALTHIER
cookies, I brought both a vegan batch (made with
coconut oil and a flax egg) as well as a regular batch (made with butter and an egg) to a group of about 12 guys.

I was pleasantly surprised at how simple to make they were, although the ingredients you'll need to add to the mix are a little different than traditional
cookie mixes; you'll need 1/2 cup
oil (I like Tropical Traditions organic
coconut oil, $ 16 at amazon.com), 1/4 cup applesauce and 1 tbsp vanilla extract.
Then I tried out this
cookie recipe with
coconut oil versus butter... and really the butter is what holds it together well.
