As I continue my venture into gluten - and - grain free cooking, as well as avoiding refined sugars, I have been using more
coconut products in my baked goods — the
oil is great for flaky scones, for instance, and the flour makes a good substitute for grain - based flours.
Usually the final
product will be a bit softer, but
in this case the recipe was developed with
coconut oil so you should be just fine.

The most awesome about living
in Brazil is that I'm not able to find other
coconut products besides milk, water, shredded

The only non-fructose one I use is rice syrup, if you add more than a few Tbsp of it I'd up the
coconut oil a touch to account for the extra liquid (the
coconut oil is what makes it firm up
in the fridge) but a granulated stevia - based
product (or simply stevia drops) shouldn't change the consistency at all!

So if you see this
product online or
in a store, just be aware that it is a highly refined
product, and that it is missing
coconut oil's star component: lauric acid.
But we quickly learned that
coconut oil had an avid following of enthusiastic fans for external skin purposes, and was a highly sought after ingredient

Sadly, once people
in the United States started learning the truth about the health benefits of
coconut oil, many producers of «extra virgin»
coconut oil appeared
in the Philippines with
products that sold for many times more than the refined
coconut oils found
in all their grocery stores, trying to capitalize on the success of the U.S. market.
I know it will not be easy to swallow that I consider having recourse to refined SHEA BUTTER but here are some reasons: 1)
coconut oil is costly and my aim is not only to avoid using unethically sourced
products, but also to reduce the cost of food; 2)
coconut oil has a very low melting point, even lower than spreadable butter, and even
in its solid state it is quite soft, so I am afraid this vegan butter will not be fit for making puff pastry; 3) for all I know, and I know little, so I am not completely sure of this,

in order to purify the
product and reduce the moisture content.
I usually do not use any
oil nor do I eat
products with
oil — so I do not have
