Now, take this dessert: I'd never heard of a
pecan coconut bread pudding in my life — I did not even recall seeing this recipe when I bought the book, years ago.
But then I thought: I am a
bread pudding convert (thanks to Nigella and Donna Hay), love both
pecans and
coconut and do not mind a little chocolate on the side.

I used 4 over ripe bananas, substituted
coconut oil, 3 cups of whole wheat flour, and 2 1/2 cups of chopped
pecans in the
bread machine for 3 hours.
This banana
bread is soft, moist and flavorful with
coconuts and
pecans in 60 minutes.

Pecans, for garnish Preheat oven to 350 degrees F. Place muffins or
bread slices in a 9X13 - inch baking pan.
I do have a weakness for chocolate chips in banana
bread but they are optional along with the
pecans and
coconut.
