Rice and flax milks are indeed thinner / less creamy than almond and soy milks, but they would work just fine in this recipe, as would hemp, oat, hazelnut, or
coconut (the stuff designed for
drinking, not the canned kind, which has way more fat, and thickens or partially hardens in the fridge) milks.

Ever since we discovered that conventional dairy triggered my oldest son's eczema flare - ups, we have tried different non-dairy milks like soy (which we don't
drink anymore),
rice, almond, cashew, almond
coconut, etc..
This diet is super healthy and does allow plenty of choices: meat, fish, vegetables (peas & green beans are fine), nuts (not peanuts which are a legume), fruit, «safe starches» (
rice pasta, sweet / white potatoes and white
rice), wine (which I like but don't
drink due to Rx), healthy fat like lard, butter, cream, olive oil and
coconut oil, dairy, chocolate, eggs, fermented vegetables and some safe sweeteners such as
rice syrup.
For the occasional use in cooking with
rice or curries, I buy
coconut milk in a BPA - free can, however, for
drinking regularly, I recommend buying this one I found via the Village Green Marketplace which only contains only one ingredient and is stored in a carton:
