I find it fascinating that you can take something as simple as a
potato and dependent upon whether it has been boiled, roasted, deep fried, baked in cheese, sliced,
cooked whole, crumbled, burnt, sprinkled in mint, or doused in yogurt — it will open your eyes to learning about another culture and their adoption of traditions throughout their own history.
Also like pumpkin, sweet
potato can be found pre-pureed in cans (I have found it at
Whole Foods and the local co-op), so you have a convenient shortcut that makes peeling,
