I used half butter and 1/2 coconut oil to coat the
sweet potatoes just because I'm
cooking w / coconut oil more these
days.
I added 1/2 of a
cooked sweet potato to the sauce (just because I had to it left over from the other
day) and used GF pasta shells.
The
sweet potato I had
cooked the
day before was perfectly soft which mashed so well into the salad.
