This ready - to - eat salad in a bag is filled with the flavors of fall, with lettuce, cauliflower, broccoli, and baby kale serving as a base for pumpkin vinaigrette, pumpkin seeds, and pumpkin
cornbread croutons (yes, you read that right).
I don't always make
the cornbread croutons when I make this salad (mostly not), because it takes more effort than I care to make.
It's loaded with chopped chicken (use store - bought rotisserie for convenience), avocado, yellow corn (fresh or frozen),
cornbread croutons, dates, almonds, tomatoes and goat cheese (which is totally optional).
This Chicken Sweet Potato Soup with
Cornbread Croutons is filled with chicken, sweet potato and white beans that's topped off with homemade
cornbread croutons!
So that's going on top along with the smoky Caesar dressing and
cornbread croutons.
Top with crumbled goat cheese and

Cornbread croutons sound like the fanciest and most delicious thing ever!

Combine
cornbread crumbs and
croutons in mixing bowl.
I also had fun making my own

cornbread.
