Corn makes me feel lousy, so while I serve these to the kids and
D on corn tortillas, I use Zenbelly's Plantain Tortillas for myself.

With greasy fingers we
would pull chunks of meat off the bone tucking them in warm

In defense of the rice ones from Trader Joe's (AKA Food for Life brand at any other store)-- yes, they break and yes, they do not behave like a regular
tortilla and are frustrating but WOW do they make the best quesadillas and if you
have a problem with
corn, try cutting them up into chips and frying them up in an inch of olive oil in a 4 quart pot
on the stove — the BEST
tortilla chips that stay crispy and do not turn stale if you put them in a plastic zippered bag for up to a few (yes few) weeks.

Our focus was to keep things simple by using everyday items most of
have on hand in the pantry and freezer, including Bush's beans, salsa, frozen

Cut
corn tortillas into triangles and place
on a cookie sheet that
has been sprayed with cooking spray in a single layer.
Spray or brush (lightly) both sides of a
corn tortilla with oil (I
have tested both methods and both work great but if you brush the oil
on be careful to do it lightly).
Had to make a minor changes due to unavailability of ingredients (made them
on the spur of the moment)- used pulverized
tortilla chips instead of the
corn meal, and «vegan cream» in place of the maple syrup.

I haven't used much in the way of
corn meals or masa before but I saw your recipe for pupusas and thought I
'd get the instant Masa (love that it says gluten free
on the bag) The bag is big though and I need more recipes besides
corn tortillas and pupusas.
If you
'd like to
have this with a side of margaritas, the squash and bean mixture tastes really great
on toasted or fried
corn tortillas.

on this one — I like
corn tortillas with pan-fried or gilled fish tacos, but, prefer soft flour
tortillas next to the super-crispy crusted deep - fried ones.
Most places
have to double up
on their
corn tortillas for a taco because the connective tissue can't handle the weight of the meat and toppings as well as their flour counterparts.
We
have eaten it
on its own, and also served it
on corn chips in place of nacho mince, but their all time favourite is when it is served inside a soft
tortilla wrap.
But the meal shown above — grilled cheese (if this were served in HISD, it
would be
on whole grain bread),
tortilla chips (in HISD, the
corn chips are baked) and edamame — is hardly dog food.
I love tacos, and since going
on a plant - based diet I
've been eating vegan tacos from one of our local taco places: the Freakin» Vegan:

on sprouted wheat
