I've had a similar experience... without wanting to sound negative, I have made a couple of the sweet recipes and
did not like them at all (the choc
chia cookies and sweet potato brownies)... I have made quite a lot of raw or cooked «clean» deserts that tasted great but these were not good at all.
To clarify: I was trying to decide whether to
do your cauliflower crust or this one, and although I ended up
doing this one, I substituted the
chia egg substitute that you suggest on the cauliflower crust recipe.
I
did the vegan
chia version of the crust and it stayed pretty soft, a little difficult to eat without a fork.
But I don't typically eat that, I eat eggs with greens mixed in or overnight oats with
chia seeds and maca and all the gross healthy things.
It literally doses you up on every vitamin and mineral that you could possibly need, thanks to the mighty combination of kale, spinach, blueberries & banana, as well as all the super foods — hemp,
chia and flaxseed —

I love the added
chia and flax, they don't really change the flavour at all but you know you're getting extra goodness, which always feels great.
I really love the
chia seeds in it but if you don't want to use them it shouldn't make too much difference

As long as you've
done the right quantities of water and
chia seeds then it will be fine as the oats will absorb the water anyway x

chia seeds in mine, but want to add vanilla and coconut like you
