It seems that both yield and quality is higher in such conditions and that the market (ultimately the consumers)
does not know how to separate between terms such as organic, song bird
coffee,
shade - grown
coffee, etc..
[There is a] strong indication that the
coffee boom of
shade - grown
coffee does not promote the more bird friendly «song bird
coffee» plantations (rustic), but rather promotes more monocultures with Inga and Albizia.
Unlike sun
coffee systems, which
do not provide pollinators with resources throughout the year (Jha and Vandermeer 2010) and are less permeable to dispersing organisms (e.g., Muriel and Kattan 2009),
shade coffee farms can promote pollinator populations and serve as corridors for organisms moving regionally between forest fragments.
Whereas all Higher Ground
coffee is certified organic and Fair Trade, and
shade - grown, Zoka
does not restrict itself to certified
coffees.
I know a number of University of Michigan graduate students who have
done thesis work on
coffee farms in Costa Rica, and they have all told me there is very little true
shade in the farms.

do appear to be sourced from areas that typically
do grow under
shade.

shade coffee farms can provide habitat for some species, they
do not possess the complete suite of species or ecosystem functions as the original habitat.
Nitrogen - fixing trees on
shade coffee farms enrich the soil, as
do the fallen leaves from the
shade trees.
Although I have found a lot of background information regarding
shade - grown
coffee, as well as more specific information mainly to
do with biodiversity indices and legislation and the requirements of the
shade providing canopy I have been having a lot of trouble finding practical resources for farmers.
Who was it that
did the study that came to the conclusion that
shade grown
coffee tastes better?
This doesn't necessarily mean that the
coffee is organic or
shade - grown, but Rainforest Alliance farms
do comply with a variety of environmental, social, and sustainability standards.
Shade coffees are not labeled certified, although some
do come from Smithsonian (SMBC) certified sources; unfortunately the fee to use the seal can sometimes be cost - prohibitive to a small roaster in the same way that the certification fee can be unaffordable for farms and co-ops.
Therefore, this label can be slapped on any
coffee, including
coffee grown in the sun, or from farms with only a few
shade trees This might be
done out of either ignorance or a desire to capture the market (see more on this here), because these
coffees usually carry a price premium.
In fact, Fair Trade certification has no criteria related to growing
coffee under
shade, it
does not require organic certification, it contains no guidelines for management of native or non-native species, it
does not require any inventory of wildlife or prohibit hunting or trafficking in animals.

A gorgeous
shade of blue and I love the
coffee machine area although I'm not sure that I'd have had the guts to
do it!
Pruning and weeding is
done by machete, and the
coffee is grown among banana and grapefruit trees, planted to diversify the plantings and create the right
shade conditions.

Using soft white, rather than a stark
shade, injects the space with warmth, as
does the wood
coffee table top and touches of nature.
