No, these potatoes don't make themselves, and they do take a bit of pre-planning (I baked the potatoes before mixing with other ingredients (which means I had to remember that everyone's going to want to eat before they want to eat) and, since I wanted these to be weight - loss - friendly, I used this Creamy Italian
Dressing (which takes about 5 minutes longer than opening a bottle of store - bought (but really didn't take any extra time because I had some
on hand in my frig (which, thankfully, is the norm — we almost always have some in our frig because we eat it
on nearly everything (salad, broccoli, rice, cabbage, bread, potatoes, and more) and it gets used in lots of
recipes (like Garbanzo Pesto Salad and Chickpea Salad Sandwich)-RRB--RRB--RRB--RRB-.
I make this more often than my more traditional Caesar salad
dressing recipe and keep grated Parmesan
on the side for those that can have dairy.
I am always
on the lookout for easy salad
dressing recipes and balsamic anything is my fav!
On another note, I have never let you know how much I LOVE your caesar salad
dressing recipe.
My Grandmother Verdie was known for this delicious
dressing and I'm so glad she passed her
recipe (and tricks to keep it moist)
on to me!
The original
recipe called for twice the amount of
dressing which I cut in half, and I recommend tossing the
dressing on at the end instead of all together with the salad, to avoid any mushiness and to keep the veggies fresh and crunchy.
Quick
recipe tip: if you're making this
recipe in advance hold off
on adding the
dressing and preferably add the avocados right before eating, just to prevent them from browning.
It is
on the
recipe but I never use it because of the MSG in most ranch
dressing mixes.

One thing I didn't mention in the Paleo chicken salad
recipe, is that if you have time, I prefer to put my chicken in the fridge for a half hour or so and let it cool down all the way, because if you put hot chicken
on the greens and then put the
dressing over it, it turns in to a wilty, soggy mess.
I use it in a salad

So here's my mom's Brussels sprouts salad
