I am sitting here debating if I should add
some flaked coconut or chopped pecans to at least enough dough for a few cookies??????? I can't decide, but either way — I think they'll be great!!
In this egg - free rendition, coconut flour and cornstarch batter stand in for the eggs and
flaked coconut stands in for the flour.
I used a wide variety of toppings, including: India Tree nature's colors sugar sprinkles in marigold, dried cranberries, dried tart cherries, salted almonds, and trail mix with nuts, dried fruit, seeds,

My favorite breakfast is oatmeal with

I added 1/4 c of unsweetened
flaked coconut (we're fans in this house) and dialed back the sugar even more.
The orange juice gives it a nice subtle sweetness,
the flaked coconut gives it a simple crunch and the toppings give it all decadence that a tasty brunch recipe needs.
