These
breakfast enchiladas are stuffed with sweet potatoes, black beans, scrambled
eggs and topped with spicy salsa verde and feta!
The
eggs are fried and should only be accepted with
breakfast enchiladas — and, of course, to accompany Easter, Cinco de Mayo, or Mother's Day brunches.
Traditionally this sauce is used over
enchiladas, burritos,

breakfast, or chiles rellenos, but its's also is a tasty addition to nontraditional recipes as well.
