Aside from some high - altitude adjustments (+25
F oven temp and slightly shorter time), I followed the recipe exactly.

An
oven temp of 425 degrees
F should be good for filet mignon, about 5 - 6 minutes for medium rare, depending on thickness.
And the best part I don't have to use the
oven, with
temps hitting the 115deg
F outside, really want to heat up the inside.
Place on the center rack of the
oven and bake for 25 - 35 minutes (depending on
oven temperament; cook thighs to an internal
temp of 165 degrees
F) then switch
oven setting to broil for a few minutes, until skin is golden and crispy.
Increase
oven temp to 425 º
F.
I think the
oven temp needs to be raised to at least 400
F.
When the internal
temp reaches 165 degrees
F, remove from the
oven and let rest, tented with foil, for 20 minutes.
After the bacon is done, flip your
oven temp to 350
F for the mac and cheese to bake in.
