For a tried and true
flax egg recipe that will replace one regular egg, simply mix 1 tablespoon of ground flaxmeal with 2 1/2 tablespoons of water.

recipe, Chia seeds are really hard to get my hands on but
flax seeds are really inexpensive.

These cookies can be made vegan by substituting 1
flax egg for the
egg in the
recipe.
A couple of things that could contribute to the batter being thicker than expected: - Not letting the
flax egg fully set - Not using the exact flour blend in the
recipe (I have not tested this with other flours, only the ones in my blend)- Dipping the measuring cup into the flour vs. spooning it into the measuring cup - The flour not being at room temperature (if it's from the fridge or freezer, it will be dryer and will suck up the moisture).
I'm not familiar with
flax egg but have had good results substituting firm silken tofu for
egg in cookie
recipes.
I haven't tried an
egg substitute in this
recipe, but you could try leaving them out altogether or subbing with some fresh ground
flax seed.
I usually include
eggs in all my banana bread
recipes but feel free to add a
flax egg or chia
eggs if you prefer!

As long as you keep the same amount of linseeds (
flax seed),
eggs and oil, the
recipe will bind together.
I use the general rule to not replace more than 3
eggs with
Flax Seed
Egg Replacer when veganizing a normal family - sized
recipe.
Also, without seeing the
recipe it's difficult to tell if this will work with
flax gel because it depends on what the
egg is being used for.
Flax gel doesn't emulsify or provide a protein structure network so my impression is that it wouldn't work as a drop - in replacement for
eggs in this
recipe.
If you try this
recipe with
flax eggs, could you let me know how it goes?

eggs or more,
flax isn't going to be powerful enough to stand up to the job as an
egg replacer.
For instance, if your vegan
recipe calls for 1 cup non-dairy milk, use 3/4 cups + 1 Tablespoon non-dairy milk (1 cup minus 3 Tablespoons) and 3 Tablespoons (45 mL)
flax gel to replace one

flax / chia and water combo.
I'm going to add the
flax eggs to the
recipe, only because I suspect that if the quinoa is too wet, that may prevent the peanut butter and dates from doing their job.
You may have heard of a «
flax egg» too, where
flax seeds are exposed to water, then added to the
recipe.
I've had a few comments that say
flax eggs work with this
recipe.
You can perhaps use a
flax egg as an alternative, but whether its the FYH
egg or another variety, you need it in order for this
recipe to work.
I made another batch this morning with 2
flax eggs and it definitely made them more solid and dense than the
recipe I posted.
These cookies are a tweaked version of Lindsey's brilliant
recipe I fell for last year (which you should totally enjoy too, a
flax egg and coconut sugar makes these babes vegan and naturally sweetened in a pinch!).

For each

recipe use 1 TBS
flax ground into powder mixed with 3 TBS water until gells up.

Flax Egg: 1 Tbsp Flaxseed Meal + 3 Tbsp Water (this
recipe needs 2
eggs, so double that) For this
recipe, you can mix the flaxseed meal right in with the yeast after it's activated.
I decided on this
recipe but I subbed
flax for the
egg.
For gluten - free or a more cohesive stack, use
egg replacer, such as Ener - G,
flax eggs, or sub in up to 1/4 cup of dairy - free yogurt or banana for each
egg in the box

I think they would work great with
flax eggs, as the originial

coconut flour can not be subbed for almond flour, i don't always know if a
flax egg will work for
egg, etc. i work very hard to create the delicious
recipes to share with you and too many substitutions makes the
recipe different than what i set out for it.
