As a parent raising four small kids I know it's a
challenge to
cook real
food as often as most of us would like.
I hear from angry parents every month who want to know why we aren't able to do here in San Francisco what they do in Berkeley; they read about school
food and get the idea that Berkeley faces all the same
challenges that everyone else does, so how come they are able to have grass fed beef and scratch
cooked meals and we aren't?
Understand the
challenges and opportunities of recruiting and retaining employees in school

A study by the Pew Charitable Trusts» Kids» Safe and Healthful Foods Project, also expected to be released Monday, said that 91 percent of school
food officials the group surveyed said they face
challenges in putting the standards in place, including problems with
food costs and availability, training employees to follow the new guidelines, and a lack of the proper equipment to
cook healthier meals.

Cooking vegan is always a fun
challenge, because even though so many
foods I normally
cook with are off - limits it makes me think of interesting ways to include
foods like protein - rich quinoa and hemp seeds, how to use fresh herbs effectively with spices, and got me totally excited to make a fig puree.
My favorite recipes to try so far have been those incorporating artichoke as this is one of my favorite
foods but my most
challenging to
cook well!
And finally — a
cooking challenge: some
foods are at their peak only when
cooked brilliantly using the most expensive ingredients.
