For muffins, try this gluten
free flour mix instead of 2 cups wheat flour.
You could use a white gluten -
free flour mix instead of tapioca, but I don't generally use these as they contain potato and grains.
Coconut oil (healthy fats) instead of butter and consist of Bob's Red Mill Gluten

I've made these twice — once at work with a gluten -
free flour mix and rice bran oil
instead of butter (we didn't have any butter in stock), and once the regular way, at home.
Didn't have zucchinis, but made these with carrots
instead and a gluten

With this particular recipe, since it's already got ground almonds in it I would just substitute the
flour for gluten -
free baking
mix, or perhaps increase the amount of ground almonds to 1 cup and use 1 cup of baking
mix instead of 1 1/2 cups.

free bread

free pancake
mix instead of the
flour, and they turned out great.
Substitutions:
Instead of using butter milk (no one makes a lactose -
free buttermilk and even if they did I wouldn't pay the money when I can do this:), I
mixed 1 cup of milk with 1 tablespoon of lemon juice and let the
mix set while I made up the
flour blend (BTW this is a great trick for making buttermilk pancakes as well).
I used Bob's Red Mill gluten

I modified it quite a bit (or rather modified your
flour mix with using only brown rice and using 1c or quinoa
flour instead of sweet rice) as our family has been whole grain for years and we are accustomed to the extra flavour, they turned out amazing even my hubby who is very cautious about gluten
free said they were the best tortillas ever and would like to use them to replace bread completely.
