GF bread flour as you described but I use sea salt because I didn't have kosher salt.

Flour in Norwich, VT and was so hopeful that the
bread we would make in the class would be better than the usual
gf white

However trying to make the
bread with the
GF flour just does not make it as fluffy, no matter what I have tried.

breads, and muffins and is supposed to be able to be substituted equally for wheat

flour bread recipes before and they weren't very good; but I was curious to see if I could adjust one of my successful
bread recipes down to two
GF flours and still have it work.
I love oat
flour, so I am glad to find a
GF bread that I didn't mess up.
i stopped adding it to my quick
breads as the
gf flour quality has stepped it up and it sometimes changes the texture into too gummy.
I know I bought so many different
gf flours, but have not tried to make my own

Our Costco sells Namaste
GF flour, but it contains sorhgum, which I find a bit too sweet for
bread and pizza, so I was looking to make my own
flour mix without sorghum.
Rice
flour, the most commonly used of
gf flours, is a fairly heavy
flour and, by itself, is not a good option for
bread.
I know in the
bread recipe, it calls for both whole spelt
flour and light spelt
flour — if I'm substituting the spelt
flour for a 100 %
gf flour, do you suggest using two different kinds of
flour, the same way two different spelt
flours were used?
I have not used this with coconut or almond
flour as i am just looking into going
GF but have used it in making
breads and using it as a base to coat chicken and what not before dipping it in
flour to fry it and it has worked well for those.
