GF bread in Arizona) «the loaves have come out dense, dry and heavy» soooo....
I use it in my Zojirushi bread maker all the time and in fact, when I travel to gluten free Expos around the country teaching how to make
GF bread in a bread maker, I'm using my mix and the Zojirushi because I can always count on the results and I'm teaching more about technique than ingredients.
Which alternate settings would be the best for baking
GF bread in that machine?
And NEVER make
GF bread in a bread maker that's been used for non-gf items.

in most of my
GF yeast
breads because you don't want to do the punch - down and second rise with gluten - free yeast doughs, so it works well to use the accelerated rise yeasts that don't need that extra rise time.
Bread machines can vary greatly and with
GF bread, the slightest difference
in wetness etc can make a big difference.
The commercial
GF loaves (even the reasonable ones) are generally dry and chalky, so the possibility of a quick to make
bread maker loaf of this quality is incredibly exciting
