Cakes don't need gluten to work and so I think they are extremely well suited to direct substitutions by weight in order to convert to GF.

I used GF flour since she has celiac and I found that my cake was «quite jiggly» even after a good 35 minutes — it's possible my oven wasn't hot enough but I was surprised at how long it took to set.

All you need is your favorite complete pancake mix that only requires water or milk (I used Kodiak Cakes protein pancake mix but I know Bob's Red Mill has a GF mix as well) and some peanut butter and jelly and you've got a delicious pancake made in less than 2 minutes, what could be better?

Hi Emily, this cake is based on my GF chocolate cake (http://84thand3rd.com/2014/08/19/best-ever-gluten-free-chocolate-cake-dairy-free-nut-free-probably-paleo-too) and quite a few people have had luck replacing the eggs on that one with flax - eggs.

I use them interchangeably for all my GF baking projects and whenever a recipe calls for flour, everything from cookies and cakes to breads and biscuits.If you are converting a recipe to gluten - free, use 120 grams of the flour blend for each 1 cup flour called for in the recipe plus 1/4 tsp xanthan gum or 1/2 tsp psyllium husk powder.
