Hi, I think you get the best result by choosing a gluten free flour mixture, they tend to rise better than only one
GF flour substitute.
I have a suspicion that the recipe would need to be modified quite a bit for a gf version, so I can't recommend a straight up
gf flour substitute.
I've had the best luck with Tom Sawyer brand of
GF flour substitute.
