I make buckwheat crêpes just with buckwheat,
no GF mix, and the taste is much better when the dough can rest for a few hours (all night).
I've tried different mixes systematically altering the starch ratio of
my GF mix, using gums or not, different butter temperatures, different techniques of making my first packet, and yet always seems to deal with the same issues.
You can make one version of the recipe with all - purpose flour and then one version of the same recipe using
that GF mix.
Any chance I could switch the flour, and use
a GF mix I already have on hand?

Some folks have adapted my regular cinnamon roll pancake recipe by just using a

If no liquid is called for, as in Bob's Red Mill

Mix, use 3 eggs and 1/2 cup butter or coconut oil.
1 tsp xanthan gum if using my flour
mix OR 2 tsp if using a flour
mix which doesn't have xanthan gum added OR no xanthan if using
GF Jules or Better Batter

I have the luxury of living near stores with huge selections of
GF flours in bulk which keeps the cost really low, about the same per cup as your boxed
mixes.
One shop started bringing in
GF pancake, waffle, muffin and brownie
mixes but one box of
mix costs more than a 500g of fine rice flour.
