We used baby
gold potatoes in this recipe and they were a terrific choice, but we've
also used fingerling and red - skinned
potatoes with equally good results.

also warmed in the microwave or in a saucepan (may combine with broth to heat) 1 cup coarsely chopped homemade «seafood seitan» (see below) or Shitake or oyster mushrooms, sauteed in a skillet with 1 - 2 teaspoons olive oil for 2 - 3 minutes over medium - high heat, seasoned to taste with granulated kelp (in place of salt) liquid smoke to taste 2 tablespoons minced fresh parsley Optional garnish: a teaspoon of fresh minced parsley and a tiny pinch of Old Bay seasoning per bowl
4 cups sliced Yukon
Gold or russet
potatoes (about 3 - 4
potatoes; you can
also use cauliflower for a lighter soup!)
The ingredients needed for this dish are basic, as you'll only need three pounds of Yukon
Gold potatoes, two tablespoons of softened Cabot Salted Butter, one pound of ground turkey, two garlic cloves, salt, black pepper, three cups half and half and
also one tablespoon of Dijon mustard.
I
also diced a Yukon
Gold potato and threw it in when the tomatoes were almost done sautéing — when the tart was done, the
potatoes were al dente, but I found the texture to be a nice contrast.
Russet
potatoes have a drier, fluffier texture than other types of
potatoes, although you could easily use
gold (yellow)
potatoes if you prefer since they
also work well in mashed
potato recipes.
I actually enjoy sweet, purple and Yukon
gold potatoes the best, but I
also love baby red
potatoes (
also known as new
potatoes) that I used in this recipe, too.

gold potatoes and yams)
also can not be eaten.
