I especially love this crust, the original recipe called for a package of crushed gingersnap cookies (made like a graham cracker crust) so I've just used all the gingersnap cookie spices in the almond
flour crust... you could
do that with any gluten or
grain free crust recipe!
UPDATE: Coconut
flour is a tricky ingredient to work with, this bread (like many
grain -
free / gluten -
free) breads
does not rise much.
For a sugar
free option cornflour will
do the job too, and for a
grain free option you can use coconut
flour, although it discolours a little on baking.
You could use a white gluten -
free flour mix instead of tapioca, but I don't generally use these as they contain potato and
grains.
Still very seedy, I found the addition of chickpea
flour to have an aftertaste I
did not enjoy, but I imagine you could substitute a variety of
grain free flours.
My
flour mix (since I'm
grain free): 100 grams of quinoa
flour, 50 grams of amaranth
flour, 20 grams of buckwheat
flour (it aids in the gel effect, as
does the amaranth, but I don't like the grittiness of the buckwheat
flour).
