U.S. hard red wheat constituted 60 % of the market in Central and South America in the mid-1970s, market share had dropped to just 12 % two decades later.3 It is largely a serendipity that this earlier drive to develop varieties of white wheat suited to the U.S. has resulted in greater availability of the white wheat option just as whole grain consumption and interest have risen.
To date, I have
milled hard red wheat, hard white wheat, soft white wheat... and even corn for corn meal.
My personal tip: hard white wheat berries have a much lighter flavor & color
over hard red wheat berries (most commercial wheat flour & bread uses red) & appeals to even those who normally don't like wheat bread, but has the same nutrition!
When stronger flours,
e.g. hard red wheat from Canada, are used it is possible to add 15 % lupin flour and still retain loaf integrity and a high quality product.
We LOVE using freshly milled Spelt for making homemade graham crackers, and we've found quite a few amazing honey - wheat sandwich bread recipes that use a combination
of hard red wheat and soft white wheat berries, too.

So I substituted rye and
hard red wheat flour for their spelt and white flour combo, and, duh, blueberries + appropriate spices instead of cherries.
