My current favorite apple is
the Honeycrisp variety, but Pink Lady and Granny Smith are also great when prepared this way.

Crisp, sweet apple
varieties work best in salads — try Jonagold, Jonathan, Gala, Fuji,
Honeycrisp or Braeburn.
But as the winter moves on, I usually end up buying just a few
varieties from the grocery store, Fuji, Pink Lady, and once in a while
Honeycrisp (but I don't generally feel like I should be spending $ 4 a pound on
Honeycrisp when all the other apples cost half as much).

honeycrisp are best for snacking on.

varieties developed at the University of California (UC), Davis, have generated $ 37 million over the past 5 years.
I get SO excited to stock up on
Honeycrisps to eat everyday, as well as a
variety of other apples for other purposes.
Expect dozens of vegetable
varieties, fruits, and flowers, and
honeycrisp and heirloom apples that are the farm's signature.
