If you only make beans from scratch once a year, definitely make it New Year's and definitely make them

We have always thought about making
black eyed peas and greens on New Year's Eve but I wasn't sure
if I liked
black eyed peas.
-- 1 can mixed beans (I used Scarpone's which was composed of a melange of red kidney beans, white beans,
black eyed peas and chickpeas but any variety or varieties you like will work)-- 1/4 cup uncooked wild rice, cooked in veg stock until tender — 2 large stuffer mushrooms — 1/2 to 1 cup panko bread crumbs (I know this is quite the range but it really depends on the moisture content of your burgers — they won't hold together
if they are too soupy)-- salt and pepper, to taste (I indulged in a healthy amount of truffle salt)
I hope you make this soup on New Year's Day, but
if not, at least have some
black -
eyed peas — even
if they don't really ensure a prosperous year, they sure taste good!
If you don't want to use dried
black -
eyed peas for this recipe, you could use the canned version.
There's nothing wrong with a big pot of —
if you'll pardon the pun — garden variety
black -
eyed peas, or Hoppin» John, for that matter.
* 4 Tablespoons butter * 4 cloves garlic, minced * 1 medium onion, diced * 1/2 cup finely chopped canned pickled jalapenos, juices reserved * 1/4 cup pickled jalapeno juice * 4 cups cooked and drained

eyes peas (rinsed,
if they were canned) * 8 ounces shredded cheddar cheese (about 2 cups) * salt and pepper
Add the chicken stock and
black -
eyed peas, as well as enough water to completely cover
peas if necessary.
If using dried
peas, soak the
black -
eyed peas overnight in water that covers them well.
These
black -
eyed pea patties are easy to make — especially
if you already have cooked brown rice in the fridge.
You can also use leftover
black -
eyed peas,
if they aren't too mushy.
1 large ripe tomato, peeled seeded and chopped (about 1 cup) 1 clove garlic Juice of 1 lime 1 jalapeno pepper, seeded and roughly chopped 1/3 cup extra virgin olive oil 1/2 teaspoon chili powder (ancho
if you have it) 1 teaspoon sugar 1/2 teaspoon salt 1/4 teaspoon freshly ground
black pepper 5 cups peeled, cubed sweet potatoes (about 2 pounds of sweet potatoes) 1 1/2 tablespoons extra virgin olive oil 3 cups

eyed peas (cooked from 1 1/4 cups dried, or use two cans, rinsed and drained) 1/2 cup chopped cilantro 1/2 cup minced red onion 1 teaspoon lime zest
If the filling spills out, remove some of the
black -
eyed peas and try again.
But as much as I love kitchen shortcuts,
if you've got a little extra time on your hands I'd definitely recommend boiling up a bag or two of
black -
eyed peas yourself.
I know it is
black eyed peas that are supposed to bring you good luck in the new year
if you eat them, but I just can't seem to get into that.
If you use canned
black eyed peas, make sure they're unseasoned.
If you don't want or didn't have time to soak the
black -
eyed peas overnight, simply power - soak them.
