Full disclosure — Johnsonville compensated me to do this post, but as always, I don't promote anything I wouldn't use myself and this dip came out fantastic with that
sweet Italian sausage rounding things together beautifully.

Some recipes call for

Italian sausage, andouille, or even chorizo, but this recipe uses our favorite porky mix - in: breakfast
sausage.
Love this recipe — my carnivore husband loved the variation I made using
sweet Italian chicken
sausage.
I won't bore you with how to make risotto, but for 2 people, the first uses 2 links of
sweet italian sausage removed from its casing and cooked with a little olive oil in a heavy skillet, broken up into small pieces and moved around until many of the pieces are crisp; then add sliced and roughly - chopped fennel bulb, cooking until it is somewhat softened; then put a lid on the pan over very low heat while the risotto cooks; add it all together (with butter and parmesan) for the last 5 minutes of the risotto process.

sweet or hot, chicken or pork) would work just as well in this recipe.
I couldn't find hot
Italian sausage or fat free ricotta so I had to sub
sweet Italian sausage and low fat ricotta.
Think next time I'll try it with the spicy
Italian sausage instead of
sweet (because that's just the way I roll).
Stuffing variations: To make a heartier stuffing cook off 3/4 pound of either ground pork or
sweet Italian sausage (casings removed) and add it to the stuffing mixture before the final baking.
I used
italian sausage — half
sweet, half hot — broccolini, and pecorino romano.
I used spiche pasta that I found at the
Italian market and some Andouille
