While you're visiting Kauai, or any other Hawaiian island, be sure to look for
Jackfruit at some of the local roadside stands operated by local farmers.
In case you don't have
jackfruit at home and you don't feel like visiting an asian store you can definitely use vegetables instead of jackfruit.

at Upton's Naturals, a vegan meat - alternative company in Chicago.
